The Central Coast was designated as an AVA in 1985. Situated across 280 miles from San Francisco to Santa Barbara, the Central Coast is home to sub-appellations Arroyo Grande Valley, Arroyo Seco, Ballard Canyon, Ben Lomond Mountain, Carmel Valley, Chalone, Cienega Valley, Edna Valley, Hames Valley, Happy Canyon of Santa Barbara, Lime Kiln Valley, Livermore Valley, Monterey, Mt. Harlan, Pacheco Pass, Paicines, Paso Robles, San Antonio Valley, San Benito, San Bernabe, San Francisco Bay, San Lucas, San Ysidro District, Santa Clara Valley, Santa Cruz Mountains, Santa Lucia Highlands, Santa Maria Valley, Sta. Rita Hills, Santa Ynez Valley, and York Mountain. The Central Coast is so vast that it features a variety of soil types and microclimates across its sub-appellations. The most common vines planted across the Central Coast are Chardonnay, Pinot Noir, Cabernet Sauvignon, Zinfandel and Sauvignon Blanc.

2010 Coruce Syrah: This wine is comprised of 90% Syrah, 4% Petite Sirah, 3% Zinfandel and 3% Viognier. The grapes were hand harvested and table sorted and co-fermented for 14 days and pressed off into 3 & 4 year old French Oak barrels.

This wine has aromas and flavors of dark cherries, plum & lavender and blueberries with a lush jammy finish.

Open and decant for 30 minutes prior to serving.

2012 Coruce Viognier: This Central Coast wine is 100% Viognier from a world famous vineyard near Santa Maria California. This wine was destemmed and cold soaked for 24 hours then pressed off the skins and settled for 3 days and racked off its solids. It was then cold fermented for 21 days in stainless steel and aged for 10 months in neutral French Oak barrels.

This wine has aromas and flavors of Honeysuckle, citrus blossoms, white melon, apricot, peach and banana. Lush and viscous with a vibrant finish. Serve chilled.

Tasting Notes

This fathomless, deep violet, unfiltered Primitivo Port-style dessert wine boasts aromas of ripe fig, caramel, dried, dark black fruit, violets, and cocoa. Rich flavors of red and blackberry fruit dominate the palate along with hints of cinnamon and clove, culminating in a scintillating finish. Rapture Primitivo dessert wine will continue to evolve and develop profound characteristics of dark chocolate if allowed to bottle age in the cellar over the next 9 to 15 years.  
 
Winemaking Process: Early morning handpicks of the late harvest Primitivo at Frankel Vineyard was completed at the peak of brix ripeness. The fruit was then allowed to cold soak for four days prior to the start of fermentation. Cold soaking or Cold Maceration is a technique where freshly picked and de-stemmed Primitivo berries and juice where kept in a tank at low temperatures typically about 48 degrees Fahrenheit. During the cold soak, the juice and grape skins do not begin fermentation. 
 
The wine was then fermented in open top fermenters, punched down 4-5 times daily for maximum color extraction and then fortified by the addition of a neutral grape spirit known as “aguardente” in order to stop the fermentation, leaving a natural residual sugar of 11% in the wine. Our Rapture Primitivo was then aged for thirty-two months in new French oak barrels with a medium-plus toast. The wine was topped off during aging with dry Cabernet Sauvignon to replace the “angel’s share” and prevent oxidation. It was bottled unfiltered in 500ml bottles in late July 2017. 
 

Pairings:  Pairs delightfully with Crème brûlée, brownies, molten chocolate cake, over vanilla ice cream, or anything with blueberries, blackberries or raspberries.

Our 2014 Soul Shaker displays a fantastic dark garnet color and offers seductive aromas of ripe currants, black cherries, pomegranate, cranberry, chocolate, exotic spices, herbs, toasted hazelnut, and hints of roasted coffee. The fruit is delivered by round, polished and dusty tannins, which explode on your palate leaving you with a mouthful of delicious juicy dark fruits. Wonderful and absolutely delicious the 2014 vintage has the potential to evolve for decades.

Tasting Notes

Our vibrant, ruby red gemstone wine is a beautifully bodied southern Rhône-style Grenache blend. Roses, red strawberries and bing cherries encompass the classic elements and style of Châteauneuf-du-Pape, swirling with sour jamminess and spontaneous bursts of rose water, crushed blood red oranges and white pepper on the finish.  

Trinity GSM is an enjoyable companion for medium bodied cheeses but our wine is invariably invited to stay for dinner with entrees of salmon, duck, pheasant, goose, pork, turkey and pasta.

Tasting Notes

This deep-purple, inky, full-bodied Syrah was barrel fermented and hand racked for 18 months in French oak barrels, 50% new with a medium toast. The dark, rich, and deliciously intense fruit embodies the richness and full-bodied nose of violets, cured maple bacon, black raspberry jam, espresso, clove spice with hints of graphite and dark chocolate on the lengthy, elegant finish that will leave you wanting more.

Mayhem Syrah is outstanding alone or as a companion for full-bodied cheeses, salmon, swordfish, roasted hen, turkey, grilled and smoked meats.

Tasting Notes

Our 2016 Enchantress white Rhône blend is seductive with vibrant aromas of tropical flowers, summer peach, pineapple, guava, and Gala apple. The palate is laced with rich flavors of tropical fruit, summer citrus, and melon coupled with a balanced crisp acidity on the finish that pulls you back for more.

Pair this wine with light to light to medium body cheeses, scallops, oysters, shellfish, seafood, poultry and good friends.

Winemaking: Early morning handpicks of the Marsanne and Roussanne at Cass Vineyard where immediately pressed while the grapes where cold from the night before preserving the freshness and fruit intensity. The wine was then cold fermented in stainless steel with limited exposer to oxygen, retaining the subtle nuances of the crisp fruit and high-tone esters. Malolactic fermentation was inhibited in the Marsanne and Roussanne, further preserving these qualities.

 

The Grenache Blanc came from Alta Colina Vineyard, Paso Robles, California. The wine was cold fermented in stainless steel with limited exposer to oxygen, retaining the subtle nuances of the crisp fruit and high-tone esters.
