Ascension Cellars is a premium, boutique winery specializing in barrel-select, handcrafted Rhône and Bordeaux-style wines from the Central Coast of California. Ascension barrel ages their red wines for two years in French and American Appalachian Oak barrels where the use of new oak is done sparingly. They blend their Rhône and Bordeaux varietals to produce wines that are more complex, better balanced, and richer than single, varietal wines. Located in Paso Robles, winemaker Erick Allen creates wines with elegance, body, and grace that elevate the senses!
Our 2015 Lumière du Soleil petillant-natural sparkling wine is seductive with vibrant aromas of Meyer lemon, green apples, Clover honey, and baked bread. The palate is light with a fine, creamy mousse filled with flavors of lemon peel, creme brulee and honey on the fresh and fizzy finish.
- Due to the winemaking process this wine has some residual yeast in the bottle. It will not be perfectly clear. Chill for at least 1 hour upright to allow the yeast to settle to the bottom.
Siren, our seductive Rhone blend rosé, was cold fermented in stainless steel with limited exposure to oxygen, retaining the subtle nuances of the crisp fruit and high-tone esters. The nose bursts of strawberry, Bing cherry, orange blossom and clementine mandarin oranges with a beautiful palate of citrus and watermelon accompanied by a bright minerality, acidity and sophistication that will call you back for more. Pair this wine with fresh goat or feta cheeses to medium-bodied Spanish Manchego cheeses, shellfish, salmon, duck, pheasant, goose, pork, turkey, and pasta.
Our 2016 Enchantress white Rhône blend is seductive with vibrant aromas of tropical flowers, summer peach, pineapple, guava, and Gala apple. The palate is laced with rich flavors of tropical fruit, summer citrus, and melon coupled with a balanced crisp acidity on the finish that pulls you back for more.
Pair this wine with light to light to medium body cheeses, scallops, oysters, shellfish, seafood, poultry and good friends.Winemaking: Early morning handpicks of the Marsanne and Roussanne at Cass Vineyard where immediately pressed while the grapes where cold from the night before preserving the freshness and fruit intensity. The wine was then cold fermented in stainless steel with limited exposer to oxygen, retaining the subtle nuances of the crisp fruit and high-tone esters. Malolactic fermentation was inhibited in the Marsanne and Roussanne, further preserving these qualities.
The Grenache Blanc came from Alta Colina Vineyard, Paso Robles, California. The wine was cold fermented in stainless steel with limited exposer to oxygen, retaining the subtle nuances of the crisp fruit and high-tone esters.

75% Grenache / 15% Syrah / 10% Mourvedre
Our vibrant, ruby-red gemstone wine is a beautiful, medium-bodied, southern Rhône-style Grenache blend with aromas of black cherry, strawberry, raspberry, lavender, tobacco, herb, spice and white pepper encompassing the classic elements and style of Châteauneuf-du-Pape, swirling with sour cherry jamminess, raspberry, strawberry and spontaneous bursts of rose water and cedar. The fruit echoes on the finish with warm notes and plush tannins. Aged for 18 months in light to medium toast French Oak barrels, about 25% new. Aged an additional year in the bottle before release.
Trinity GSM is an enjoyable companion for medium bodied cheeses but our wine is invariably invited to stay for dinner with entrees of salmon, duck, pheasant, goose, pork, turkey and pasta.
This deep-purple, inky, full-bodied Syrah was barrel fermented and hand racked for 18 months in French oak barrels, 50% new with a medium toast. The dark, rich, and deliciously intense fruit embodies the richness and full-bodied nose of violets, cured maple bacon, black raspberry jam, espresso, clove spice with hints of graphite and dark chocolate on the lengthy, elegant finish that will leave you wanting more.
Mayhem Syrah is outstanding alone or as a companion for full-bodied cheeses, salmon, swordfish, roasted hen, turkey, grilled and smoked meats.

Our fathomless Bordeaux-style blend was long aged, barrel fermented and hand racked for thirty months in 40% French oak barrels. It is luscious, sleek and complex with floral red currant and spice box aromas that lead to layered, concentrated flavors of black cherry, mocha, white pepper, sweet cinnamon and oak that jump from the glass. Velvety-soft, round tannins linger on the mid palate, producing a rich, elegant, dry finish. Enjoy now or be rewarded if allowed to cellar for 2 years or more.

Our Revelator Cabernet Franc, is a bright, savory, medium-bodied wine brimming with deep aromas of pepper, plum, blackberry, blueberry, cherry, lilac and violets, culminating into a mouthwatering finish that lingers.
This wine compliments medium to sharp cheddar cheeses, roasted meats and vegetables, braised short ribs, grilled steaks, prime rib, filet mignon, lamb, hearty stews and the company of dear friends.
Early morning handpicks of the Cabernet Franc where in late September of 2016, the fruit was de-stemmed and fermented in small tanks, with regular pump overs to aid extraction. In order to let the varietal fruit shine through, the wine was aged in French oak barrels with a light-medium toast for over 28-months.
Bottled in January 2019.
